When it gets to the weekends there's something about freshly baked goods that really gets me going! Last week I found a recipe for Raspberry Muffins and knew I had to make them. I try to live a clean diet for the majority of the week but I'll be the first to admit when it comes round to the weekend I find it hard to resist the odd sweet treat.
Like I told you in my last 'Mouldy Makes' post (See HERE) I'm no Master Chef, but lately I've been taking a lot of pride in cooking and I've found myself a little more experiential than usual. This recipe is super easy and these muffins cook up a treat.
125g self raising flour (I opted for gluten free)
50g caster sugar
1/2 tsp baking powder
60ml sunflower oil
40 ml milk (I used almond milk)
A handful of chopped raspberries
Simply mix together the flour, sugar, baking powder, egg, oil and milk.
Add in the chopped raspberries
Empty in to muffin cases
Bake for 25 minutes on 180C
So easy, not too sweet but simple and yummy to eat!
